Three days in Cairo is the right length for the Pyramids, the Egyptian Museum (or GEM), Saqqara/Memphis, and Khan el-Khalili — without rushing. This is the standard add-on for travellers extending a Red Sea or Mediterranean trip, and it is also the right length for a stand-alone weekend if you only have a long flight window in mind.

The three-day structure is usually: Day 1 — Pyramids of Giza + Sphinx + Solar Boat Museum; Day 2 — Egyptian Museum + Coptic Cairo + Khan el-Khalili; Day 3 — Saqqara + Dahshur + Memphis. With a guide, this covers about 70% of what the average first-time traveller wants from Cairo.

Historical context

Saqqara and Dahshur are older than the Giza Pyramids — Saqqara's Step Pyramid (Djoser, 27th century BCE) is the oldest stone monument of its size in the world, and the Bent and Red Pyramids at Dahshur (Sneferu, 26th century BCE) are the engineering experiments that immediately preceded Khufu's Great Pyramid at Giza.
